Elderberries

Our fencerows are full of elderberries which are now in full bloom. The sweet scent drifting when the wind dies down. I plan on harvesting some for juice and jelly. I will use the same process on the elderberries as I am doing on the grapes. With the 4th of July looming Martin and I are swapped trying to get the mowing and landscaping done for our customers so we might enjoy the weekend.



You have not slipped from my thoughts I am merely working at home, in the office and out mowing.

We had cattle out..... Just finished dinner when neighbor called and calves on the road. Started to remove a pet peeve.... A cedar stump in the fencerow... The wind was in the right direction. Burned it out and will chop off the remainder.

Selected and wash your fruit jars..



Sterilize all your jars and utensils with hot water.



I'd purchased several pounds of Sweet Seedless Red Grapes due to our store receiving way over what they'd ordered.



Pick the grapes off the stems. Select only firm grapes you'd consider eating tossing the damaged, mushy, split, or unmatured.



Thoroughly wash your grapes.



To each quart jar add 1 1/2 cups grapes............ ( Yes I know I have overfilled the cup...ooppss!)



Measure out 1/3 cup of sugar.



Add the sugar to each jar.



Fill each jar to the neck with HOT water. ... (About 3/4" from the top )

Screw on finger tight each rim securing the lid.



With some canners you might need a "spanner" jar to take up space so jars don't move in the boiling water or clatter.



Place on the lid and process one hour after water surrounding the jars comes to a rolling boil.... NOT SHOWN..... in the bottom of my roaster is a rack... do NOT place glass jars directly on the bottom of the pan... they will EXPLODE !



After an hour I just turned off the heat allowing the canner to cool down over night These are my jars of home made grape juice. You need to shelve your juice for about a month so the flavors totally develop.

Our local store had a SCREW UP and were shipped too many Red Seedless California grapes..... They had to sell a bunch FAST.../ lowered the price.... I took advantage of this. I am busy canning Grape Juice prohibiting me from chatting or much of a blog tonight.

Once again my afternoon ended up being wasted at the hospital..... Only good outcome being to put more weight on my still booted foot My iron (Ferrous Sulfate 325 mg ) intake is up to 3 times a day... eeeeeK ! I'll start RUSTING !

I think our lawn has been sprinkled with Fairy Dust. LOTTSA toadstools in the Western lawn.



There was also this unusual specimen. I'd never seen a cluster such as this one..

"Boothill"

Several members have mentioned loosing their beloved pets. I'd planned this blog a few days ago just to show the peaceful beauty of the hill.



The Catalpa tree on our "Boothill" where we lay our pet horses, dogs, and cats is in full bloom. The orchid like clusters giving off their special sweet scent.



I also have Tiger Lilies next to the tree.



Here lies my ever so special Heidi who was featured in numerous blog on another site.



The Hawthorn tree I transplanted to our yard is doing well. I've hit it with nitrogen .



The yellow string beans by the shed are starting to form blossoms.



My "potted" potato plants are thriving. I don't expect a major crop due to crowding but it does make for an interesting focal on the patio.
