Clean up in isle 5 ! Not every ear of sweet corn is a perfect roasting ear. It is necessary to go back through the rows to pick the "leftovers" and make the most of them by canning or freezing. For me right now freezing is the easiest method. Some of the ears are ok... you just have to trim around the bugs. ] Other ears are small "scrubs" with just a few bites of corn available. When you have all the sweet corn trimmed from the ears.it is time to guess how much sugar, salt, and water to add in order to cook the kernels. About mid-way through the cooking I could tell I needed a bit more water. I bring the corn to a good solid, full, rolling boil for about 15 minutes. I turn off the heat allowing to corn to cool to room temperature before bagging it for the freezer. JD just wanted a steak and baked potato. I'd picked up crab salad for myself at the store along with a yam that I made into zesty fries . |
