To MY CLOSE FRIEND Ms RANI of NEPAL..... Wishing RAS MALAI DREAMS with Sapna_ji.


The latest in my circle of close friends is RANI, a charming, attractive, hardworking and wonderful from Nepal, whom I just missed to meet in person in a fraction of a second during my last Nepal visit in July-August 2014; blame the unprecedented security for a visiting Head of Nation from a friendly neighboring country. Our meet turned impossible by just an unanswered call.. any way..it is not going to be my last visit to Nepal, with many more in the offing in due course. She has her close friend in Sapna_ji and their good night 'ras malai' greetings prompted to post this blog on making RAS MALAI, as stated by Sanjeev Kapoor, well known chef.

Ras malai or rosh malai is a popular milk sweet of India, Pakistan and Bangladesh; with it said to have had its origin from the Eastern Indian state of Odisha boardering West Bengal and Andhra Pradesh. Ras means juice and malai means cream. It is a rich cheese cake with out a crust.

Make cottage cheese balls, press them to make in patty shape.
Put half a litre milk in to a pressure cooker and add 1/3 rd cup of sugar to it and boil on medium heat till the steam comes out. Add cheese balls to it, cook for 7 minutes. Take out patties from the cooker after they get cooled, squeeze. Keep them aside.
Boil milk in a pan, stir, then add sugar to it to make syrup. Add patties to it, cook few minutes. After cooling off, add cardamom powder. Garnish with almonds, pistachios and saffron strands.
Serve chilled.
Sure that it would give real ras malai nights of xsweet dreams; with Dasara (Vijayadasami) and Diwali not far away.
